Woodall’s by Cranswick has won three Great Taste Awards

The Great Taste awards are run by the Guild of Fine Food and involve a judging panel of over 450 expert chefs, buyers, food writers and retailers who provide honest, straightforward feedback on products entered.

Woodall’s three British Charcuterie air dried hams each scooped awards this year: Woodall’s Air Dried Cumbrian Ham - awarded two stars, Woodall’s Air Dried Royale Ham - awarded one star and Woodall’s Air Dried Black Combe Ham was awarded one star by the judges.

Woodall’s has used traditional curing and smoking methods to produce British Charcuterie for eight generations. The original pork recipes are still used today to create a unique range of air-dried hams and salami.

Commenting on Woodall’s Air Dried Cumbrian Ham, the judges said: “Good looking thin slices of pale pink ham, almost translucent, with a good proportion of fat to lean. We enjoyed the silky texture and delicacy of flavour; just the right level of salt. Delicious – easily a match for Italian and Spanish hams, melt in the mouth texture, lovely porky flavour.”

For Woodall’s Air Dried Royale Ham the judges said: “There’s a lovely, mild yeasty finish to this product which is not too salty……we liked the complex, rounded flavour. The salt level is good, along with the slicing and drying.”

Finally commenting on Woodall’s Air Dried Black Combe Ham, the judges said: “Good evenly streaked meat, good proportion of fat. Pleasant mild flavour with subtle smoke flavours and a well-judged salt level. Good even slices and an attractive appearance to this air dried ham. Well cured with a good balance of flavours. Not too salty. Tender to eat.”

Great Taste, organised by the Guild of Fine Food, is the acknowledged benchmark for fine food and drink and has been described as the ‘Oscars’ of the food world.
